Westby Cooperative Creamery announced a $14 million expansion project designed to increase cottage cheese production capacity at Wisconsin’s only remaining cottage cheese manufacturing facility. The comprehensive renovation includes new refrigeration systems, 10,000-gallon cream tanks, and a 30,000-gallon milk silo. Officials say the upgrades will allow the facility to increase production while simultaneously cutting production time, addressing growing demand that currently exceeds the plant’s capacity. Beyond cottage cheese, Westby Cooperative Creamery also produces sour cream and yogurt. The company plans to expand those production facilities in the future as well.
